The harvesting season generally commences towards the end of August, beginning of September and finishes mid October. Mostly we have 4 or 5 different harvests. The exact harvest dates depend on the ripeness of the grapes and of course on the weather. Prior to the harvests we take samples of different grape varieties in order to evaluate their ripeness and to determine the best harvest date for each variety.
The grapes are carefully selected, manually and only the best grapes are admitted to the cellar for vinification.
All grapes are picked and processed on the same day. The red grapes are destemmed and then conveyed to the fermentation tank. The white grapes undergo whole cluster pressing under cool conditions and after sedimentation, without addition of SO2, the fermentation is set in.
