Our cellar is located, partly underground, behind our vineyards.
We use stainless steel and cement tanks for fermentation and we use 20-50% new barriques (oak casks of 225 litres each) for further maturation and refinement, thus creating a balance between grape derived flavours and oak derived components. We mostly use French oak, Allier, but we do also experiment with different types of oak.
Vinification of our wines is carefully monitored and controled. Each year is unique and therefore vinification might slightly differ from one year to another depending on the quality of the grapes.
