2007 La Volpe

Location: Monteleone di Orvieto, Italy
South-eastern slope, at an altitude of 350 meters, surface of vineyard: 1,5 ha
Grape variety: 75% Sangiovese and 25% Merlot.

Vinification: After destemming, fermentation took place at a maximum temperature of 29°C for a period of 8 days in our cement tanks, with regular pushing down the cap in order to have the skins immersed.
Maturation: For one year in used oak French barriques
Malolactic fermentation took place in barrique.
The wine: Drink between now and 5 years.
