Vinification: | After destemming, fermentation took place at a maximum temperature of 29°C for a period of 15 days in our cement tanks, with regular pushing down the cap in order to have the skins immersed. |
Maturation: | For one year in used oak French barrique and one year in inox. Malolactic fermentation took place in barrique. |
